Cinco de Mayo Recipes

This morning we made our second dish for our Morning Show Meal Ticket Contest. Chef Eileen Quinn cookedShrimp Fresadilla. It tasted amazing and is really easy to make if you plan on having a people over. The secret ingredient this week is tomatillo. Chef Eileen made a recipe for Rice and Beans that would go well with the shrimp.

Ingredients
-1/2 pound of salt pork (diced)
-3 garlic cloves
-2 cups of white rice
-1 cup of Gandules (Pigeon peas)
-3/4 cup of tomatoes (diced)
-1 1/2 cups of chicken broth
-teaspoon of cayenne
-salt and pepper

Directions
1. Brown the salt pork
2. Stir in rice and garlic
3. Add tomatoes, Gandules, broth, and cayenne and stir
4. Add salt and pepper
5. Bring everything to a boil, then lower to a simmer
6. Cook for 15 minutes or until liquid is absorbed
