Morning Show Meal Ticket on Foodie Bus Tour

This month we’re hosting a contest called the Morning Show Meal Ticket. You can enter to win a seat on a bus tour that Martins is sponsoring. The trip will be Sunday, May 31st and stop at five different restaurants in Chicago. For the next four weeks we will be making a dish related to the restaurants the bus will stop at. Each week we will give you a secret ingredient in the dish and that’s how you enter the contest. This week we made a traditional Greek dish called Spanikopita and the secret ingredient is filo dough. After trying the Spanikopita, I started thinking about what other Greek dishes I love and Saganaki (Greek Flaming Cheese) immediately came to mind. Below is a recipe I found if you want to give it a try. It goes great with pita bread! FYI-it’s not the healthiest dish in the world, but who cares it taste great! If you’ve got a Greek dish you love, I’d love to hear from you.

Ingredients
-8 sl Kasseri cheese; (1/2-inch)
-salt
-freshly ground black pepper
-2 c brandy
-1 c flour 
-4 tb butter
-2 lemons; juiced
-8 Rounds pita bread: brush with oil
-1 c Kalamata olives 
Instructions
Season both sides of the cheese with salt and pepper. Place the cheese in a shallow dish and cover with brandy. Cover with plastic wrap and refrigerate for 2 hours. Season the flour with salt and pepper. Remove the cheese from the pan, reserving 1/4 cup of the brandy and dredge in the seasoned flour, coating completely. In a large saute pan over medium heat, melt the butter. Pan-fry the cheese for 2 minutes on each side. Add the reserved brandy and carefully flame the liquor, shaking the pan back and forth several times. Add the lemon juice. Remove from the pan and serve with the pita bread and olives. Yield: 4 to 6.
